Feast in Napa Valley
Cajuns are an ethnic group living in the
state of Louisiana. Cajun food is rural, fantastically seasoned, hearty
and sometimes spicy. Chef Allen Calhoun is a master at bringing the Cajun
out in all of us. He is going to teach you how to make Roux of all kinds,
especially the Black Roux. You will also learn how to make a Cajun Spice
