Bouchaine April 2014 Chef Series Demonstration & Dinner

Join us at the winery with Chef Steve Augulia of AquaKnox
restaurant of Las Vegas for a demonstration of his sea-focused specialties,
followed by custom menu, created to pair perfectly with Bouchaine wines.

- Yellowfin Tuna - gojugang viniagrette, pickled radish, micro shiso, sesame
pearls
- Steak tartar - truffles, capers, gyoza chip


FIRST COURSE: Dungeness Crab Salad - greek yogurt, melon, carrot-honey, desert
bloom greens


ENTREE: Dry Aged Duroc Pork- foie gras of the sea, wild mushroom and corn

succotash, black truffle sauce


DESSERT: Marinated Strawberries - ricotta mousse, preserved walnuts, lemon
poppy popover
